Chicken & Asparagus Recipe
I got a lot of requests for the recipe for this chicken dish I made in my recent video so, ask and you shall receive!
- One package asparagus
- Olive oil
- Lemon pepper (I got mine from Trader Joe’s)
- Chicken (thighs, breasts, whatever you like!)
- Vodka pasta sauce
- Fresh Basil
- Ripe peach
- Lemon pepper
- Seasoning (I used a medley from Trader Joe’s)
For the asparagus – heat up some olive oil in a pan on low heat. Once warm, add the asparagus. Chop up some garlic (a whole bunch so you can save some for the chicken) and then add that too. Slice up some lemons and squeeze some lemon juice onto the asparagus. Season how you like and cook with a cover to your desired texture.
Chicken – heat up some olive in a pan on low heat. Once the oil is warm, add the chicken and the garlic. Add as many spoonfuls of vodka sauce as you like (I used a spoonful for every piece of chicken I had, e.g. one breast = one spoonful of vodka sauce). Now slice up some peaches! Add the lemons to the simmering pan as well as your desired seasonings. After 1-3 minutes, add the peaches and basil and increase the heat to medium. Allow the vodka sauce to get a little crispy. Once you cook your chicken to your heart’s desire, turn off the heat and serve with asparagus! Leftover peaches make a great dessert!
